Details

Processing day goes badly without restraint. A bird that can flap bruises its own meat, splashes blood over everything and makes a clean cut hard to place. A cone deals with all three at once by holding the bird head-down with its wings pinned. This one is formed from heavy-gauge galvanized steel with hemmed edges, so there is no raw sheet edge to catch a hand or a bird. The back is flat rather than round, which means it mounts against a wall, a post or a board without shimming and sits flush once fastened. Galvanizing matters here because the cone gets rinsed constantly and bare steel would rust through in a season. Head-down restraint also does part of the work for you. The bird settles once it is inverted, the head comes through the bottom opening where you can reach it, and bleeding runs down and away rather than over the carcass. Hose it out between birds and give it a proper wash at the end of the day. Mounting two or three in a row on the same board is the usual arrangement, and it turns a one-at-a-time job into a line.
