Details

The difference between this and the single-edge knife is simple and worth understanding before you choose. Two ground edges mean it cuts on the pull and on the push, and it does not care which hand you hold it in. If you are doing a string of feet in an afternoon, that halves the number of times you stop to reposition the blade. The trade-off is control. With one edge you can brace a thumb on the spine and take fine, deliberate slices near sensitive tissue. With two, there is nowhere safe to put that thumb, and the upper edge is right there when you roll your wrist. This is a knife for bulk paring: cleaning up flare, dropping overgrown toe, taking loose horn off a sole. It is not the one for delicate work around an abscess. Plenty of people carry both, this for volume and the single-edge for anything that needs finesse. At these prices that is not an extravagant pair to own. Sharpen and check both edges before every session, because a dull double-edge is the worst of both worlds. Store it with a guard on. This is not a knife to go fishing for blind in the bottom of a bucket. Anything that looks like it is going deeper than horn is a conversation with your veterinarian, not a deeper cut.
